Paper trail, meaning a contract signed by you. If you get cash nobody knows you work there. If he stiffs you, you know where the bar owner is every night. You know where the building is. You know where he parks his car. He isn't going anywhere. If you are doing a one night stand you might want one.

Nobody ever stiffed me in 13 years. I have taken less money on very slow nights. As a PR move. I don't think I should but I do. That brings up something else. If it's a slow night, how is that my fault. Why should I take a cut. Especially if the bar owner doesn't advertise. If it's a really good night they never give me credit and pay extra.

the only time I have ever worked a bar for less than negotiated is when an unforseen equipment failure happens. This has only happened once.
My deal with the bar owners is this.....once you bring them in, it's my job to keep em here. I will have some of my regulars stop by but if you are looking for me to fill the bar for you I'm not your man.

I've never had a contract in 9 years we've been working. Never been stiffed...the one time a tv did get broke...the owner paid me for it that night...and i am always paid cash at the end of the night. Only ONE time did i have to wait till the next day to get paid...and the bartender came to my house to give it to me. I've been lucky.
