I know that this one was put out by SC but I can't find a copy of the disc anywhere

I have it on VCD but eliminating the multiplex guide vocals is a pain in the neck process because I have to remember to use the multiplex function at the start of the song and then remember to set it back to its original position when it's done.

you should be able to record the audio track without the vocals from your video disc and then use that audio track to make a CDG Track. Simple thing to do.

I personally think that if a Karaoke producer is going to make one band's remake of a song that they should also do the other artist's version of it as well.
