I'm able to do Springsteen okay. Someone told me they thought I would sound good doing Springteen so I tried it. I only wish he were more popular in the Karaoke crowds here in Cincinnati. Once a girl told me I was dead on Springsteen. Great complement until she offered me voice lessons :)
So I guess I'll save the truly unique voices for when someone else tells me to try them.
In the meantime, I do a lot of songs just because I feel like singing them and I don't care how I sound. I have the most fun with Ray Charles and Stevie Wonder :)

The toughest would probably be Minnie Ripperton, because my whistle register is shaky and uncontrolled above an F6 and my natural voice is not a delicate pure soprano like hers was.
I also think everyone will have different answers to this question depending on their natural voices.

Every Pop Artist today.
Because without Autotune and other effects, it is impossible to do what they do.
