This one's easy !

What should he have said and why?

The correct answer would be

Probably 1, because the doorman was looking for a descending sequence of numbers that when added together would be divisible by 3.  This is all I can deduce from that number sequence.  The number 3 is a common denominator.

OR

Look you foolish bouncer,  I know you can't count, and have a really bad memory,  but I'm one of the six guests that's with the club member you just admitted before me.

Other than that,  I concede.

Answer:

The password to get into the club was obviously a "number" .....

when the doorman said six ....... the member replied with a larger number --> TWELVE ...  that when spelled out had six letters in in.

when the doorman said three ... the member replied with larger number -->SIX ... that that when spelled out had three letters in it.

So ...... when the doorman said FIVE  ... either SEVEN or EIGHT would have been gotten the guest in the door, because they are both larger than five and when spelled out have 5 letters.

Here are 2 more :

1..In a contest, four fruits (an apple, a banana, an orange, and a pear) have been placed in four closed boxes (one fruit per box). People may guess which fruit is in which box. 123 people participate in the contest. When the boxes are opened, it turns out that 43 people have guessed none of the fruits correctly, 39 people have guessed one fruit correctly, and 31 people have guessed two fruits correctly.

How many people have guessed three fruits correctly, and how many people have guessed four fruits correctly?

2.  Name three consecutive days without using the words Monday, Tuesday, Wednesday, Thursday, Friday, Saturday, or Sunday?

:::::get's in car with the guy that incorrectly answered "10". As the car pulls out've lot to go to common folks bar across the street,  flips off doorman yelling..  "I NEVER WANTED TO GET INTO YOUR ELITIST JOINT ANYWAY":::::

That was a good one actually CCindy. VERY difficult, the kind I like.. But this particular riddle, I'd not have been able to solve with so few clues.

10 People guessed 3 correctly because it is impossible to get 4 out of 5 correct!

A person has a drawer full of socks- 20 pairs of white and 20 pairs of black. They do not roll them, but just throw them in the drawer. One night the power goes out and they cannot see in the drawer. What is the minimum number of loose socks they have to grab to make sure they have a matched set?

You are right DBK .... It is not possible to guess only three fruits correctly: the fourth fruit is then correct too! So nobody has guessed three fruits correctly and 123-43-39-31 = 10 people have guessed four fruits correctly.   :drums:

As for the one you posted..... I'm gonna say three ???  ....

With only two colors .... if you take three out the odds are that 2:3 will be matching.  Just a guess tho!

EDIT:::OOPS ~~ Sorry Lon ... didn't see ya sneak in there!  I defer.

You folks have probably already seen this one but, if not, here ya go: What is greater than God, More evil than the devil, The poor have it, The rich need it, And if you eat it, you'll die?

And here is a really cute one: When playing baseball, does it take longer to run from first base to second, or from second to third?  Explain your choice.
