y'know..... chances are I've never had GOOD mexican food..... I probably just THINK it's good up here..... I'd better not try the good stuff otherwise mine will be ruined for me!
If you folks really want something good, I suppose I could give you my coveted Tortilla soup recipe. This is a recipe my brother got from Baby Acapulco's in Austin. They are pretty well known for the best Tortilla soup in town and I believe we have actually improved the recipe some. This stuff also has near miracle curative powers when you have a cold or even a sinus infection. My family eats it alot in the winter when any of us feel a bit ill. It always makes us feel better. Yum this stuff is good. The secret is the chicken broth of course combined with the peppars / spices and the herb cilantro. Let me know if any of you are interested, and I'll look up and post. This stuff is just delish!

K... I just had to tell you all about the corn I had last night! I got it from one of those roadside stands....
Here in Alberta, there's a bitty town called Taber.... and they're known for their corn (something about the soil or somethin) So when you're in Alberta and you see a sign that says "Taber Corn" You GOTTA get some.....
ok, so anyways.... got the corn and OOOOOHHHH MYYYYY GOOOD!! It's the best corn I've had in YEARS... I usually get the Taber stuff all the time, but THIS year it's absolutely incredible!! Anyone else had good corn recently? I think it's the weather patterns this spring/summer.... lots of heat.... then lots of rain...... then lots of heat...

Yep, with global warming Canada is the new Texas of the north. So, I'll be chasing up there soon. Not surprsing in many years I have chased North Dakota almost to Canada. Weather patterns and jet are moving that way more and more. Weather is dead down here this year.

Ok, more recipe to try. I did this on my grill and it turned out great.
1 - 1.5 lb of ground pork meat
several large Portobella mushrooms with stems cut off
2-4 cloves of garlic
1-2 tbl spoon of ginger
3-4 tbl spoon of soy sauce
1-2 tbl spoon of dark sesame oil
2 tbl spoons of cooking sherry
1/2 cup of bread crumb
1 egg
1/8 cup each of finely chopped waterchestnut and bamboo shoots
Salt and Pepper for seasoning
Mix all the items together in a bowl. Put a thin layer of the mixture on bottom layer of the portobella mushoom. Put them on the grill with the meat side down on medium heat. Cook until done, slice them and serve as appetizer.
Optional dipping sauce:
1/4 cup soy sauce
2 tbl spoon of dark sesame oil
2 tbl spoon of rice vinegar
1 tea spoon garlic
1 tea spoon ginger
handful of chopped green onion
Try it and let me know what you think.

NEW Texas? I've called Alberta "Canada's Texas" for as long as I can remember! Big Oil, Big Beef, flat prairies, and even some of the town names are the same. There's a Beaumont, Grande Prarie, a quite a few others Not to mention all the country music lovers and cowboys. The cowboys up here just aren't QUITE as hot as those Texans though :drool:

Ok, totally food related. I got a call from a woman friend who attended my BBQ. She's pregnant and she is having a baby shower in a couple of weeks and wants me to cater. :shock: That was totally unexpected. She even offered to pay, which I declined. Maybe this will be my second (or third) career. Hmm, imagine a Karaoke party with good food all the time. Wait, that was my BBQ.
My friend wants to do this every month, BBQ/Karaoke. It's a way to meet women he says. He hosts locally on Saturday nights and he's going to invite every pretty woman he meets, both at karaoke and outside. Then at the show, he can make his move. Such a shlemil.
Well, I guess we will give it a try. Good food and singing go together well, just not at the exact same time.
