Depending on the recording device & mic used, it's possible to get a full sounding recording. We mic'd an entire drum set with one high dollar condensor mic & no one could tell the entire kit wasn't mic'd up.
No feedback is because his mics weren't actually going through your PA, they were just picking up the signal & going directly into their recording set. You get feedback when a mic on a pa is pointing at a speaker (or picks up the speaker output) & feeds it back through the PA amplifying the signals it hears each time through an endless loop until the loop is broken.
