When processing venison antelope or elk use a mixture of real cream and coffee. Age the meat at a cool temp for at least 4 days. Squirrel can be cooked without aging like rabbit but requires more cream and coffee. if you dont like grease then dont kill and cook a goose.. A pheasant or quails breast is the best meat in the world. If you havnt tasted these things then you have never lived..

Tasted all the above.. And just so you know, never shoot a deer on the run..
The adrenaline makes it quite gamy.
